Fool's Dozen

Directions: 

  1. Preheat oven to 350º.
  2. Bring a large pot of water to boil. Add potatoes and cook until soft. Drain potatoes and transfer back into pot. Add butter, half and half, garlic powder and 1 teaspoon salt. Mash until creamy and smooth. Evenly divide potatoes into 2 medium bowls. Add blue food coloring to one, red to the other. Mix until desired color is reached. Reserve, keeping warm.
  3. In a large bowl combine ground beef, onion, minced garlic, brown sugar, ketchup, eggs, 2 cups bread crumbs, remaining 1/2 teaspoon salt and pepper. Roll into 12 balls. Poke a hole in the middle of each ball and form into a donut shape.
  4. Place remaining 1 cup bread crumbs into a medium bowl. Coat the outside of each donut with breadcrumbs. Transfer to a baking pan lined with parchment paper, leaving 1 inch between “donuts”. Bake for 15-20 minutes or until internal temperature reaches 160°. Do not overcook or they will dry out and begin to crack.
  5. Place colored potatoes into 2 separate zip top bags. Cut off 1/2-inch of a corner and pipe potatoes onto the meatloaf donuts. Top with parsley flakes and crushed red pepper.
