Pumpkin Protein Waffle Sandwich
Enjoy this protein-packed waffle sandwich on a lazy Sunday with family or a busy morning at home while you work!
Directions:
- Preheat waffle maker.
- In a medium-sized bowl, add pancake mix and pumpkin puree and 1 cup water. Stir until well combined.
- Add an additional 1/4 cup of water if the batter is too thick, and mix well.
- Spritz waffle maker with cooking spray, pour 1/2 cup of batter onto the maker and flip.
- Cook until waffle is golden on the top - it's done if it easily slides off the waffle maker in one piece.
- Once waffle is cooked, set it to the side and fry the egg as desired.
- Once ready, fold the egg inside waffle like a sandwich and drizzle with a teaspoon of maple syrup.
