Pumpkin Protein Waffle Sandwich

Enjoy this protein-packed waffle sandwich on a lazy Sunday with family or a busy morning at home while you work!

Directions:

  1. Preheat waffle maker.
  2. In a medium-sized bowl, add pancake mix and pumpkin puree and 1 cup water. Stir until well combined.
  3. Add an additional 1/4 cup of water if the batter is too thick, and mix well.
  4. Spritz waffle maker with cooking spray, pour 1/2 cup of batter onto the maker and flip. 
  5. Cook until waffle is golden on the top - it's done if it easily slides off the waffle maker in one piece. 
  6. Once waffle is cooked, set it to the side and fry the egg as desired. 
  7. Once ready, fold the egg inside waffle like a sandwich and drizzle with a teaspoon of maple syrup.
