Gluten Free Almond Pancakes

Directions:                    

  1. Preheat griddle to 350°.
  2. In a food processor, grind the almonds into fine crumbs. Whisk in the eggs, baking soda and agave.
  3. Coat the griddle with cooking spray. Pour ¼ cup of mixture onto the hot griddle. Allow to cook until bubbles appear and the edges are dry. Gently flip pancake over. Color may be very brown.
